Ingredients Serving: 2

  1. 2 large fillets of any white fish
  2. Tomatoes French beans or any vegetables you have on hand
  3. 2 tbspns olive oil
  4. 2 teaspoons minced garlic
  5. Juice of 2 limes
  6. Few sprigs of parsley or basil or any herb finely chopped
  7. Salt to taste
  8. Freshly ground pepper


  1. In an flat pan heat the olive oil over medium / high heat till surface sheen appears
  2. Place the fillets flat in the pan gently and leave undisturbed for 2 minutes so the side touching pan bottom is seared.
  3. Meanwhile in a small bowl, mix together the lime juice, garlic and parsley ( or any other herb ) of preference
  4. Flip the fillets over with a wide spatula and drizzle the lime juice mixture over the fillets.
  5. Add your veggies of preference on the side.
  6. Partially cover and cook for no more than 5 minutes on medium heat.
  7. Add salt and pepper to taste and serve right away !
