Ingredients to make Cheese Folds

  • For the filling:
  • Crumbled cheese- 1/2 cup
  • salt- 1/2 tsp or according to taste
  • Ajwain/ Carom seeds- 1/4 tsp
  • corn, crushed - 2 tbsp
  • green chillies, chopped- 2 or according to taste
  • Amchoor powder- 1/2 tsp
  • jeera/ Cumin powder- 1/ 2 tsp
  • Garam masala - 1/4 tsp
  • For the outer layer:
  • all purpose flour- 1 cup
  • salt - 1/2 tsp
  • Sooji/ semolina- 1 tbsp
  • oil- 1 tbsp
  • Ajwain/ Carom seeds- 1/4 tsp
  • water as needed to make a soft dough
  • Chaat masala- to sprinkle at the end
  • oil- enough to fry

How to make Cheese Folds

  1. In a bowl mix all the filling ingredients together.
  2. For the outer layer, in a separate bowl add all the ingredients and make a soft and smooth dough.
  3. Now take a small dumpling and make a big roti. With the help of a round medium size cutter, cut round shapes out of it.
  4. Now take a small round shape and pat it with your hands. The layer should not be too thick. Put in a teaspoon of filling and fold it from both sides.
  5. With the help of fork, press it on the top and then the side so that mixture doesn't come out. Similarly make all the cheese folds.
  6. In a wok, heat the oil and fry it on a medium flame till they turn golden brown in colour.
  7. Sprinkle some chat masala on top. (optional)
  8. These yummy and crispy cheese folds are ready to be eaten. It tastes best with dates and tamarind chutney.
