Ingredients to make Plum Pudding

  • 2 cups all purpose flour
  • 1 cup sugar
  • 1 cup or 3 eggs
  • Caramelized sugar (for dark colour) 1/2 cup
  • Candied fruits (cherries, orange peels,candied ginger and raisins soaked in rum for 1 week) 2 cups
  • butter (Salted) 2 cups
  • Cake spice (6 cardamom, 1/2 Nutmeg, Mace of 1 pod, cloves 4 ) powder these in a grinder and use 3/4 tbsp
  • Baking powder 1 tbsp
  • Sodium Bicarbonate 1/2 tbsp

How to make Plum Pudding

  1. Take flour in a large bowl, mix it with baking powder, soda bicarbonate. Then sift it well and put it in a jar overnight.
  2. Take the butter (it should be frozen) and rub it with your hands or in a mixer, slowly adding sugar and then the eggs. Next add in the cake spice and mix it all with the flour.
  3. Next, add in the chopped mixed candied peels that have been soaked in rum. Pour in the remaining rum and caramelized sugar (it should be a very dark colour).
  4. Grease a silicon container or any container which will fit in a steamer. Then pour in the batter.
  5. In a large pan, boil water. Once the water starts boiling, immerse in the pudding batter container.
  6. Cover both the containers and lower the flame, then let it steam. Note to keep checking the water level.
  7. After about 40 minutes, put in a tooth pick to check the stickiness of the batter. If the tooth pick comes out clean, turn off the stove. Remove and let it cool, then demould it.
  8. Before serving, pour some brandy on the top and light a match stick, immediately there will be a blue flame. Carry it on a platter to the dining table.
  9. This plum pudding is best eaten with a thin vanilla custard.

My Tip:

When this batter is baked in a slow oven temperature it is a plum cake. When the batter is steamed, it becomes a pudding. You can make orange peels at home, it's far better than the market ones and gives your cake a good flavour. Important Note: Please see the boiling water level is below the pudding batter container. Soak orange peels in salted water over night, drain put in s pan cover with sugar and cook on medium flame till sugar coats peels. If its liquid in consistency its okay,just cool put it in a glass container and pour rum. I let my peels soak the whole year It gives your cakes and puddings a unique flavour.
