Schezwan Chicken

Ingredients to make Schezwan Chicken

  • Schezwan Sauce- 4 tsp (store bought)
  • sugar 1/2 tsp
  • Sichuan peppercorns crushed 1 tsp
  • salt to taste
  • water 1/4 cup
  • oil 1/2 cup
  • Chopped coriander leaves to garnish
  • For the Marination:
  • chicken 300 grams
  • garlic chopped 2 tsp
  • peppercorns cracked 1 tsp
  • chilli flakes 2 tsp
  • Soya sauce 2 tsp
  • cornflour 3 tsp
  • salt to taste

How to make Schezwan Chicken

  1. In a bowl, take the chicken and all the ingredients mentioned in the marination list. Mix well till all the ingredients nicely coat the chicken well with the ingredients. Keep it aside for about 10 mins.
  2. In a pan heat oil. Once the oil is heated, add in the chicken pieces in batches and deep fry the chicken on a medium heat till it turns golden. This will take around 5-10 mins. Keep it aside.
  3. In a frying pan, heat 3-4 tsp of oil (use the same oil which you used to fry the chicken). Add in the schezwan sauce, crushed sichuan peppercorns, sugar, salt to taste and water.
  4. Mix it well. Once it starts to boil, add in the fried chicken, toss it nicely till the chicken is coated well with the sauce.
  5. Fry it for around 3-5 mins. Then take it off the heat.
  6. Garnish with coriander leaves and serve.
