ABOUT Schezwan Fried Rice RECIPE

Schezwan Fried Rice is the most easiest and quickest recipe when you have very little time and want to eat something really filling. All you need is some veggies, some rice and sauces and your rice will be ready to eat. Whenever I go to restaurants this is one of my favorites. Many people think that making fried rice is difficult because of the chopping part (as it requires fine chopping). So here goes the recipe of Schezwan Fried Rice. Hope you all enjoy it!

Ingredients Serving: 5

  1. 2 cups washed and soaked long grained Basmati rice
  2. 1/2 cup chopped onions
  3. 1-2 cloves finely chopped garlic
  4. 1/2 cup each of chopped carrots, beans, cabbage and capsicum
  5. 1 tsp each of oil and lemon juice
  6. Salt according to taste
  7. For the sauce:-
  8. 5-6 red chilllies, deseeded and soaked in hot water (for 15 minutes)
  9. 1 tbsp each of grated garlic and ginger
  10. 2-3 shallots finely chopped
  11. 2 tbsp of tomato sauce
  12. 1 tsp of dark soy sauce
  13. 1/3 tsp of sugar and pepper powder
  14. 1/2 tsp lime juice
  15. 2 tbsp oil

Instructions

  1. Method to prepare the sauce:-
  2. Grind the soaked red chilies into a fine paste. In a pan, heat oil then add in the ginger and garlic and saute it well. Once the raw smell fades away, add in the grounded paste and saute well till the mixture leaves the oil. Once it starts to leave oil, add in the soy and tomato sauce and saute it well again.
  3. As the soy sauce is high in salt content add in very little salt and mix it well. Then add in the sugar and pepper powder. Finally add in the lemon juice and turn off the heat.
  4. To prepare the rice, wash and soak 2 cups of rice for 30 minutes. After 30 minutes drain the water.
  5. In a vessel, add 5-6 cups of water and bring it to a boil. Add in one pinch of salt, 2-3 drops of oil and lemon juice. Once the water comes to a boil, add in the rice and let it cook till it's half done. Turn off the flame and drain away the excess water.
  6. To prepare the fried rice, take a heavy bottomed pan, heat oil and add in the chopped garlic and onions, saute it well. Once the raw smell goes away, add in the chopped veggies and saute it for some time. (Do not over cook the veggies as we want a nice crunch in our fried rice.)
  7. Next add in the prepared sauce and give it a nice mix so that all the veggies get a nice coat of the sauce. Once nicely coated, add in rice and stir in well. Let it cook for some time with the lid on it. After 5 minutes remove the lid and stir it well.
  8. Next add in a pinch of salt and pepper powder and give it a nice mix.
  9. Schezwan Fried Rice is ready! Garnish it with celery leaves and serve it hot.
