Peanut Curd Rice

Ingredients to make Peanut Curd Rice

  • rice (boiled)- 2-3 cups
  • mustard oil - 3 tbsp
  • salt to taste
  • Red chili powder to taste
  • turmeric powder to taste
  • onion - 1 chopped
  • mustard seeds - 1 tsp
  • chana dal - 1/2 tsp
  • White urad dal - 1 tsp
  • water - 3-4 tbsp
  • curd - 1/2 cup
  • coriander leaves for garnishing
  • masala for grinding-
  • peanut - 1/2 cup
  • Dry red chili - 3
  • coconut powder - 3 tbsp

How to make Peanut Curd Rice

  1. Dry roast peanuts, dry red chillies and coconut powder till brown in color. Cool it.
  2. Then grind it coarsely in a mixer. Heat oil in a kadai. Add mustard seeds, chana dal, urad dal and let it splatter for a few minutes.
  3. Now add onions and fry till golden. Lower the flame. Add ground peanut masala. Mix it.
  4. Add salt, red chili powder, turmeric powder. Mix well. Add water and mix well. Keep it on slow flame.
  5. Now add rice and mix well. When it is mixed properly, add curd and again mix for 10 mins. Switch off the flame.
  6. Garnish with coriander leaves.
  7. Serve hot.
