Hyderabadi Dum Biryani

Ingredients to make Hyderabadi Dum Biryani

  • Whole Basmati rice 1&1/2 cup
  • water
  • Cauli flower 1/2 cup
  • carrot 1/2 cup
  • Green peas 1 cup
  • capsicum 1/2 cup
  • Roasted cashews 15 to 20
  • paneer cubes 1 cup
  • yogurt 1 cup
  • oil 3 to 4 tspn
  • Red chili powder 1 tspn
  • turmeric 1/4 tspn
  • Kitchen king masala 1 tspn
  • Biryani masala 1 tspn
  • butter cubes 4 to 5 spoon
  • salt as per taste
  • onion 1/2 cup
  • ginger n chilli paste 1 spn
  • Fresh mint leaves 2 to 3 spn
  • coriander leaves 1/2 cup
  • Kasuri methi to sprinkle (optional)

How to make Hyderabadi Dum Biryani

  1. First, wash rice and cook it, but don't over cook it. Then drain the water from rice.
  2. In the meantime, chop the vegetables.
  3. Take one pan, add oil, add jeera, then onion, cook for a minute, add some garlic paste and ginger paste 3/4 spoon each. Add vegetables, mix it. Add salt and mix it. Cover it and cook for 3 to 4 minutes.
  4. When vegetables are half cooked, add all spices, remaining garlic n ginger paste, yogurt, paneer cubes. Mix it well and cook for another 2 to 3 minutes. Switch off the flame.
  5. Take one microwave safe bowl, pour some gravy with vegetables. Take some amount of rice on gravy sprinkle mint and coriander leaves . Put some roasted cashews. Again put some gravy. Now again add rice on it and do the same procedure. Now put remaining last layer of gravy and layer rice on it and repeat the procedure.
  6. Put butter cubes and Cover it. And put in microwave for 10 minutes on medium power.
  7. Enjoy.

My Tip:

In the last layer, instead of sprinkling coriander and mint leaves, you can give another flavour, you can pour saffron milk 4 to 5 tpns. (soak saffron and milk for an hour). It will give a different colour and texture
