Ingredients to make Sugdi

  • Whole wheat flour - 1cup
  • almonds - 12-15
  • Ajwain - 2tsp
  • jaggery - 1/2 cup chopped
  • ghee - 3tbsp ( heaped)
  • cashewnuts and raisins - Optional

How to make Sugdi

  1. Roast whole wheat flour on slow fire till it turns brown.
  2. Add ajwain and chopped almonds in flour while roasting.
  3. In another pan add ghee and when it is warm add chopped jaggery.
  4. When the jaggery melts, quickly add the flour and mix it well. You have to do this fast because otherwise the flour will become hard and will be like a lump.
  5. Take it out in a bowl and garnish it will other dry nuts. This is purely optional.

My Tip:

I generally roast the flour in advance and keep it. When I want to make, I add ghee and jaggery and the flour which is already ready. This saves a lot of time.
