Rose + apple + cardamom in a jalebi

Ingredients Serving: 6

  1. Apple (large) 2
  2. Maida 1 cup
  3. Sour curd 1/4 cup
  4. Baking Soda 1 Tsp
  5. Powdered elaichi 1 tsp
  6. Rose water 2 tbsp
  7. Besan 2 tbsp
  8. Water as required
  9. 500 gm sugar
  10. 500 ml water
  11. Powdered elaichi 1 tsp
  12. Rose essence 1 tsp
  13. Ghee to fry
  14. Few rose petals
  15. Pista to garnish


  1. For batter: mix the Maida, curd, baking soda, powdered elaichi 1 tsp, rose water in a bowl and mix
  2. Add water just enough to make a thick batter and whisk well with hand. (don't worry if the batter is too thick. You can add water to it at any stage)
  3. Leave for 3-4 hours or overnight to ferment
  4. For chashni: mix the sugar with equal amounts of water and till it dissolves in a thick bottomed pan, stirring at regular intervals.
  5. Continue to do this on medium or low flame till you reach one string consistency
  6. Take off flame and add chopped rose petals, elaichi, and rose essence.
  7. Take the batter and whisk it once again and adjust consistency
  8. Heat ghee in a pan
  9. Peel and core the apples. Slice them in rounds. (do not slice them very thinly)
  10. Dip these slices once in dry Maida to coat lightly. Then dip in batter and fry them in ghee till golden brown
  11. Garnish with rose petals, pista and serve hot.
