Veg Kolhapuri

Ingredients to make Veg Kolhapuri

  • tomato cubes 2 cups
  • cashew 10
  • Whole kashmiri chilli 5
  • butter and Oil 1 tbsp each
  • cumin seeds 1 tsp
  • bay leaf 1
  • cinnamon 1 inch stick
  • cloves 4
  • cardamom 2
  • ginger garlic paste 2 tsp
  • Green chillies 1 tsp
  • onion cubes 1/2 cup
  • chilli Powder 1/2 tsp
  • Turmeric and coriander powder 1 tsp each
  • Garam masala 1 tsp
  • salt as per taste
  • Vegetables & other ingredients: oil 2 tbsp
  • Blanched cauliflower florets 1/2 cup
  • Boiled green peas, Blanced carrots and beans 1/4 cups
  • paneer cubes 1/4 cup
  • Broken cashew nuts 1 tbsp
  • capsicum 1/2 cup
  • salt to taste
  • Fresh cream 2 tbsp

How to make Veg Kolhapuri

  1. Make a paste with tomato, dry chillies and cashews
  2. In a pan put butter & oil. Add jeera,then put,bay leaf,cinnamon stick,cloves & cardamom. Fry. Add ginger garlic paste and fry well. add green chillies also
  3. Add onions and fry well . then add tomato paste, chill powder ,coriander powder,turmeric, garam masala & some salt also. Fry well till oil separates. Turn off the heat .
  4. In another pan,add oil,when hot,add all vegetables,broken cashew nuts & salt. fry well for 2.min. Then add the prepared gravy ,with enough water. Mix well. If you want more gravy, add more water. Fry for some time.. Then add cream too. Mix it slowly. After a few minute. Turn off the heat.
  5. Serve hot

My Tip:

You may add any vegetable potatoes and also mushroom
