ABOUT Christmas Sugar Cookie Fruit Pizza RECIPE

Sugar cookies as the name suggest is soft sugary confectionery where each bite of the cookie is melt-in-the-mouth. This cookie is a giant version which I wanted to try out, especially to see if it retained its size. It's deliciously crumbly and soft in the inside with beautiful frosting of cream cheese. The topping of fruits gives an extra edge to the cookie.

Ingredients Serving: 8

  1. For Sugar Cookie -
  2. 1 cup unsalted butter
  3. 1 cup granulated white sugar
  4. 1 tsp vanilla extract
  5. 1/2 tsp almond extract (optional)
  6. 1 egg
  7. 2 teaspoons baking powder
  8. 3 cups all purpose flour
  9. 1/2 tsp Salt
  10. Cream Cheese Frosting -
  11. 4 oz package cream cheese, softened
  12. ¼ cup butter, softened
  13. 1 cup powdered sugar
  14. 1 tsp vanilla
  15. To Assemble -
  16. 1 can Fruit Cocktail/Very Cherry
  17. Sprinkles for garnishing

Instructions

  1. Preheat oven to 350 Deg F (180 Degrees C )
  2. In stand mixer or hand mixer, cream butter and sugar till smooth (about 3-4 minutes).
  3. Add the extracts and egg. Beat again till it's a homogeneous mixture.
  4. Combine flour, salt, and baking powder. Whisk well.
  5. Now add flour 1/2 a cup at a time and beat well. Repeat process till all flour is used up.
  6. Gather the dough together and knead with hands till it forms a dough.
  7. Take a spring form baking pan or wide and low cake pan.
  8. Make two sections of the dough. Take one section, flatten it in a disc shape and spread it out with your palms evenly in the cake pan. Make sure the edges look clean.
  9. Bake in the oven for approximately 12-15 minutes or until edges turn slightly brown.
  10. Remove from oven and leave aside to rest for 5 minutes. Transfer to a wire rack to cool completely.
  11. Combine the frosting ingredients together and whisk well till no lumps are seen.
  12. Place the sugar cookie on a serving dish. Spread the cream cheese frosting evenly on it. Arrange the fruit pieces over the frosting and garnish with sprinkles. Before serving, cut it in wedges.
