Pineapple Kiwi Piquant

Ingredients to make Pineapple Kiwi Piquant

  • All-purpose flour 1 cup
  • eggs 6
  • Baking powder 1/2 teaspoon
  • Granulated sugar 1 cup
  • Whipping cream 1 pint
  • pineapple essence 1 teaspoon

How to make Pineapple Kiwi Piquant

  1. Take a large size bowl and beat eggs and sugar together until soft peaks appear.
  2. In another bowl, sieve all-purpose flour and baking powder together.
  3. Fold flour mix in egg batter gradually.
  4. Greece the cake mould and dust some flour.
  5. Pre-heat the oven at 180°C for 5 minutes.
  6. Bake for 40-45 minutes.
  7. Check if the cake is done by inserting a toothpick in the middle of the cake. It should be come out clean.
  8. Switch off the oven and cool the cake before applying the syrup and frosting.
  9. Take a bowl and beat the whipping cream with enough sugar and pineapple essence until a nice fluffy frosting is ready.
  10. Now cut the top of the cake to make it flat.
  11. Cut the cake into 3 equal circles.
  12. Take a cake stand and place one piece of cake and apply a generous amount of frosting and top it with pineapple and kiwi slices.
  13. Place the another cake slice on it and do the same as above.
  14. Apply the remaining frosting on the top of the cake and on all sides.
  15. Top the cake with fruit slices and design it.

My Tip:

Poke all the 3 pieces of cake with a fork. This will help the syrup to penetrate into the cake.
