ABOUT Eggless n Boozeless Christmas Pudding RECIPE

A Christmas Treat for vegetarians and children, with the goodness goodness of nuts, seeds and dry fruits.

Ingredients Serving: 8

  1. Whole Wheat Flour - half cup
  2. All purpose flour - half cup
  3. Baking powder -1 tsp
  4. Baking soda - 1 tsp
  5. Cinnamon and nutmeg powder - a pinch of both
  6. Milk -1 cup
  7. Chopped nuts ( almonds, cashew, sunflower seeds) - 1/4 cup
  8. Mixed Dried Fruits ( approx 4 figs, 4 dates, 6 apricots and one tbsp raisins)- 1 cup
  9. Butter - 1/4 cup
  10. Powdered sugar - 1/3 cup
  11. Candied orange peel - 1/4 cup
  12. Chia seeds - 1 tbsp
  13. Flax seeds -1 tbsp
  14. Grated ginger -1 tsp
  15. Vanilla extract - 1 tsp

Instructions

  1. Heat the milk and soak the dry fruits in it for at least an hour
  2. Powder the flaxseed and chia seeds and keep aside
  3. Sieve the flours along with baking powder, soda, nutmeg and cinnamon powder. Add the flax and chia powder and give it a mix
  4. Cream the sugar and butter until fluffy and well combined
  5. Grind the dry fruits with milk in an electronic mixer-grinder, to get a smooth paste. Add this to the sugar and butter and mix to combine
  6. Add in grated ginger, vanilla, candied orange peel and half the chopped nuts
  7. Now add the dry ingredients and mix to combine well, to get a smooth batter. If you feel your batter is a bit tight or dry, you may add some more milk to get the desired consistency
  8. Transfer the batter to a greased baking tin and top with the remaining chopped nuts
  9. Bake in a pre-heated oven at 180 degrees centigrade for 45 mins or until a toothpick inserted in the middle of the cake comes out clean
