Stuffed Bitter Gourd

Ingredients to make Stuffed Bitter Gourd

  • 5-6 bitter gourd
  • For stuffing -
  • 2 tsp yellow mustard seeds
  • 2/4 tbsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 2 small onions
  • 6-7 garlic gloves
  • 2 green chillies
  • 1/4 tsp hing
  • 3/4 tsp tamarind pulp
  • Salt as required and water

How to make Stuffed Bitter Gourd

  1. Cut the bitter gourd in 2 parts from the middle. All in the same way.
  2. Heat oil in saucepan/ kadai add salt and then add the bitter gourd in water for boiling. Cover it. Boil till it gets soft. Turn off the flame keep aside.
  3. For stuffing -
  4. Soak mustard seeds for few minutes and grind it in the blender. Keep aside.
  5. Take onion ,garlic, green chilli and grind it in blender.
  6. Heat oil in a pan, add cumin seeds, add the onion garlic and green chilli mixture fry it till the mixture gets light brown.
  7. Add mustard seed paste and salt and fry it for few minutes in medium flame.
  8. Now add coriander powder, red chilli powder, cumin powder, turmeric powder and fry for 3-4 minutes more add tamarind pulp.
  9. Fry til the oil gets separate.
  10. Now off the flame, take the bitter gourd and with the help of knife take out the seeds from all the bitter gourd.
  11. With the help of spoon stuff with the stuffing into it. All in the same way. Keep some stuffing aside.
  12. Heat oil in a pan, add the stuffed bitter gourd.
  13. Now in the stuffing add some water and mix well and add into the pan and cook for few minutes
  14. Serve with roti paratha
