Spinach Carrot and Potato Roastie( Enjoy dieting).

ABOUT Spinach Carrot and Potato Roastie( Enjoy dieting). RECIPE

I had eaten Roastie in Marches ,Singapore. I loved it so much that decided to make at home. I added Spinach and Carrot to avoid adding more potatoes which enhances weight gain. . I added Cornflakes to give some more crunch.

Ingredients Serving: 3

  1. Potatoes 8 to 9 ( 750 grms)
  2. Carrot 1 big. 250 grms
  3. Spinach.leaves 100 grms ( 10 to 15).
  4. Wheat flakes 3 tbsp
  5. Garlic crushed 1 tsp
  6. Salt and pepper to taste
  7. Parseley / Rosemary ( dried).
  8. Olive oil . 2 tsp / roastie.
  9. Sour Creme while serving

Instructions

  1. Par boiled Potatoes in pressure cooker for just 1 whistle. Or boil in water for 7 to 8 minutes.
  2. Grate the carrots , wash Spinach leaves, squeeze and chop. Coarse grind Wheat flakes.
  3. Peel potatoes and grate with the side which has the biggest holes in the grater.
  4. Now mix all 3 vegetables. Add corn flakes and garlic.
  5. Heat some oil in a pan, put a ladle of the mixture and spread it so that it covers the bottom of the pan.
  6. Cook for 7 to 8 minutes or till golden brown.
  7. Flip over and let other side cook with 1 more tsp of olive oil. Cook for 7 minutes.
  8. Spread salt and paper. Serve hot with Sour creme.
