ABOUT Carrot Peanut Salad RECIPE

This is super easy carrot peanut salad with roasted sesame seeds and lime dressing for weight loss! Serve it into dinner!

Ingredients Serving: 2

  1. 2 medium sized carrots, unpeeled, julienned into this slivers
  2. 2 tbsp raisins, soaked for 30 mins
  3. 1/4 cup peanuts, roasted, coarsely chopped
  4. 2 thai sesame seeds, roasted
  5. 2 tbsp coriander and mint leaves, chopped
  6. For the dressing:
  7. 2 tbsp lime juice
  8. 1 tsp raisin paste
  9. 1 tsp roasted cumin seeds powder
  10. Salt to taste

Instructions

  1. Mix the carrots with the raisins.
  2. For the dressing, mix ask the ingredients and wrist together.
  3. As the dressing to the carrots and raisins, toss to mix thoroughly.
  4. Allow the carrots to marinate in this liquid for 30 mins to 2 hours. In hot weather, this could be done in the fridge.
  5. Before serving, mix the previous and half the sesame seeds and garnish coriander, mint leaves and remaining sesame seeds.
  6. Ready to serve for dinner!
