Ingredients to make Watermelon barfi

  • For red cashew barfi:
  • cashew powder 2 cups
  • sugar 1 cup
  • water 1/2 cup
  • ghee 2 Tbsp
  • Few drops of red food colour
  • For white cashew barfi:-
  • cashew powder 1 cup
  • sugar 1/2 cup
  • water 1/4 cup
  • ghee 1 tbsp
  • For pistachio barfi:-
  • Unsalted pistachio powder 1 cup
  • sugar 1/2 cup
  • water 1/4 cup
  • ghee 1 tbsp
  • Few drops of green colour

How to make Watermelon barfi

  1. Grind the cashew in a food processor .boil the sugar in water till it forms a one thread syrup.reduce the flame and add the cashew mix it well .add the red food colour .the dough will resemble a soft dough.pour the dough on a ghee greased surface and knead the dough well.
  2. Make the white cashew burfi in the similar manner except adding the red or the green color. Roll the dough with a rolling pin in to a rectangular shape. keep aside.
  3. Make the pistachio burfi layer as well in the similar manner except, instead of the cashew nuts powder, you have to add pistachio powder and the green fool color. knead a dough, roll and keep aside.
  4. Roll out the pistachio barfi and the white cashew barfi with the help of a greased rolling pin on a sheet of plastic wrap to rectangular shape and 1/8 thickness .make them the same size .make a roll of a cashew barfi in to a cylinder shape. same size in length as the longer side of the rectangle .
  5. Place the red cashew cylinder at the very top of the long side of the white cashew rectangle .roll the cashew cylinder roll into the white cashew rectangle .roll to make sure .it is nice and smooth.
  6. Now place the above roll on the green pistachio rectangle roll tightly .roll to make sure it is nice and smooth.cut in to 1/2 inch pieces .and cut the round discs into half to resemble a half moon. Add muskmelon seeds on to the red part of the cashew barfi part to resemble a watermelon.serve.
