The recipe has been adopted from The Cookie and Biscuit Bible by Catherine Atkinson. Fun cookies to make with kids. Very easy to make and perfect for gift hampers.

Ingredients Serving: 10

  1. All purpose flour 1/2 cup
  2. Instant Coffee Powder 3/4 tea spoon
  3. Boiling water 1 tea spoon
  4. Corn starch 1/4 cup
  5. Cocoa Powder 1/2 table spoon
  6. Castor Sugar 1 & 1/2 table spoon
  7. Butter 1/2 cup

Instructions

  1. Pre-Heat the oven at 190 degree C.
  2. Beat well the butter and the sugar into a smooth paste.
  3. Mix the coffee powder and the water nicely so that there should be no lump. Add it to the butter and beat well.
  4. Mix all the other the dry ingredients and add to the butter mixture.
  5. Knead well.
  6. Make 9 to 10 balls or more depends on which size you want, out of the dough. Flat them by pressing in between your palms. The thickness should not be more than 1/4 inch. Take a fork or a toothpick to give an impression on the cookies.
  7. Bake for 15 to 20mnts. Depends on your oven. Check after 15 minutes. If the cookies are firm enough from both sides that means the cookies are ready.
  8. Take them out from the oven. Cool them and store them immediately in an airtight container. You can store it for 1 to 2 weeks.
