Ingredients Serving: 10

  1. 125 g unsalted butter
  2. 65 g castor sugar
  3. 125 g plain flour
  4. 65 g rice flour
  5. Pinch of salt
  6. 200 g dark chocolate chopped
  7. Pine nut caramel
  8. 50 g unsalted butter
  9. 50 g soft brown sugar
  10. 400 g MILKMAID
  11. 50 g pine nut

Instructions

  1. Mix the butter and sugar in a bowl and beat untill light and fluffy, sieve flour,rice flour,salt and work the ingredients together to form a soft dough. Roll the dough in a disk,cover it with clinge sheet and chill for 30 minute in a freezer
  2. Lightly oil the 20 cm tin,line it with a butter paper,allowing the paper to overhang the sides of tin. Roll tge dougg on a slightly floured slab and gently press it in to a tin, soothing it as flat as possible. Bake in preheated oven at 180 degree C for 25 min or till golden brown. Keep aside to cool.
  3. Make the pine nut caramel. Heat butter,sugar and milkmaid in a pan, stirring continuously untill butter melted and sugar dissolved. Bring the boil, whisking regularly, cook on high flame for 5 minutes or untill thick. Remove from heat ,add pine nuts and pour it on shortbread and keep it in fridge for 2 hours to set.
  4. melt the chocolate in microwave, pour it over set caramel and keep it aside to cool and set. Cut slices with a sharp knife.
