ABOUT Whole Wheat Flour Malpua (Atte ka Malpua) RECIPE

Malpuas are an Indian version of pancakes, that are soft, fluffy and yet crisp. Malpuas are soft from inside, but its edges are crisp. Malpuas are then immersed in sugar syrup. Traditionally Malpuas are prepared from maida/all purpose flour. But this recipe is prepared using whole wheat flour, to make these yummy and delectable malpuas more healthy and that too without compromising on its taste. Whole wheat flour malpua is a traditional sweet dish of India. Malpua is an Indian version of pancakes. Whole wheat flour malpua is an authentic dish that is prepared in almost every festival and special occasions. Malpuas are crispy from outside and soft from inside. Every bite of a whole wheat flour malpua will give you an amazing experience. Whole wheat flour malpua recipe comes to us from our foremothers. The best part of this dish is that you can store it in your fridge for about 3-4 days. This is a compulsory sweet dish that is made during the marriage ceremony in Orissa. It is easily available in every sweet shop and you can also prepare it at your home. By the help of this recipe you can definitely know how to make a perfect Whole wheat flour malpua. This malpua is prepared by whole wheat flour, curd, sugar, baking soda, cardamom powder ,water and dry fruits. It is an easy recipe, but it is quite difficult for the beginners. Ingredients Serving: 4

  1. For the Malpua Batter
  2. 1 cup whole wheat flour/gehun ka atta
  3. 2 tablespoon sugar
  4. 2 tablespoon curd/dahi
  5. 1/4 teaspoon Baking Soda
  6. Pinch of salt
  7. 1/2 -1/3 cup water
  8. For the sugar syrup
  9. 3/4 cup sugar
  10. 1/3 cup water
  11. pinch of cardamom powder
  12. Other ingredients
  13. 5-7 cashews, thinly sliced
  14. 5-7 almonds, thinly sliced
  15. 5-7 pistachios, thinly sliced
  16. Ghee for Deep Frying

Instructions

  1. For the Malpua Batter
  2. In a wide bowl, combine whole wheat flour, curd, sugar, salt, baking soda and mix well.
  3. Add about ¼ cup water and mix well. Now add water gradually and mix well till it forms a smooth flowing batter. Make sure there are no lumps in the batter.
  4. Set aside for 15-20 minutes.
  5. For the Sugar Syrup
  6. To prepare sugar syrup, add sugar and water in a pan and allow the sugar to melt. Simmer the sugar syrup for 10-12 minutes on low to medium flame.
  7. You should have a one string consistency sugar syrup.
  8. Add cardamom powder and turn off heat. Set aside.
  9. Preparing Malpuas
  10. Heat ghee in a broad thick bottomed pan on low to medium flame.
  11. Pour a small ladle full of batter in the centre of the pan without spreading it. The batter will spread on its own.
  12. Do not try to touch the malpua till it starts to turn golden along the edges. It will slowly get immersed in the ghee and cook on medium flame till the sides are golden brown.
  13. Once sides become golden brown, flip it over and cook for another 2-3 minutes or till it turns golden brown.
  14. With the help of a slotted spoon, drain the Malpua and place it in the sugar syrup immediately. Fully immerse the Malpua in the sugar syrup for half a minute. Make other malpuas in the same manner.
  15. Remove the malpua from the sugar syrup and then place it on a serving plate. Sprinkle sliced nuts over the malpuas.
