ABOUT Chettinad biryani stuffed whole chicken RECIPE

The stuffed rice in the chicken is very delicious ,the chicken is tender and soft and juicy ,if you want to impress your guests try this recipe.

Ingredients Serving: 5

  1. 500gms whole chicken
  2. 400 gms rice
  3. Mushrooms (keema)
  4. Onions 2
  5. Curry leave 1 spring.
  6. Oil 5 tbsp
  7. Thyme 1tsp
  8. Garlic few
  9. Rosemary 1tsp
  10. Spice mix
  11. Bay leaf 1
  12. Stone flower 2tbsp
  13. Coriander seeds 3tbsp
  14. Cumin seeds3tsp
  15. Cinnamon stick 2 sticks
  16. Black cardamom 1tbsp
  17. Black pepper 2tsp
  18. Red chilli 6-7
  19. Chilli powder as per taste
  20. Ginger garlic paste 1 tbsp (fresh)
  21. Tamrind paste 1 lemon size ball
  22. Turmeric little
  23. Water to grind fennel seeds 1tsp
  24. Fresh coconut 1/2cup
  25. Salt as per taste.
  26. For chicken
  27. 1tbsp Honey

Instructions

  1. FOR THE CHICKEN Marinate the chicken with honey and spicemix (roast all the spicemix except coconut)keep it aside for 1/2 hour. Spice mix might be u will be needing 1/4 cup.
  2. Cook the rice until almost done, drain and keep aside.
  3. For biryani Heat oil in a pan add when oil is hot enough add curry leaves add onions let it brown little, add mushrooms and cook until all the water is evaporated add the spice mix and cook until oil float on top. To this add your cooked rice and mix well.
  4. For stuffing the chicken Take the marinated chicken and stuff some biryani into the cavity pull the wings and legs and tie a kitchen twine around the whole chicken . Take a pan and some oil and heat it to that add rosemary ,garlic,onions place ur chicken on onions and cook covered for 30 min (for first 10 min keep the flame on high then reduce the flame and cook).try flipping the chicken in between.
  5. You can bake it also Preheat oven to 180 take a baking tray add oil ,garlic,rosemary; onions and place chicken on it and bake for 30 min or until done.
  6. After cooking chicken place it on Biryani and serve.
