Ingredients to make Mocha and Crème Cupcakes

  • 1 1/2 cups all-purpose flour
  • 1 cup fine sugar or caster sugar
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup unsweetened cocoa powder
  • 1 sachet expresso mix available in the stores (ready made coffee mix)
  • 1 cup warm water
  • 1/2 teaspoon coffee powder
  • 1 tablespoon white vinegar
  • 1/3 cup melted butter
  • 3/4 cup cream cheese
  • 1 egg
  • 1/3 cup caster sugar
  • 1/2 teaspoon vanilla extract

How to make Mocha and Crème Cupcakes

  1. Preheat oven to 180 degrees C. Line one standard 12 cup muffin pan with paper liners.
  2. Take cream cheese in a bowl. Add egg, sugar and vanilla extract. Beat to get a smooth mixture.
  3. Dry ingredients -In a large bowl, take all-purpose flour, baking soda, salt and sugar. Pass cocoa through a strainer to remove lumps and add to the bowl. Add expresso mix and whisk all the ingredients.
  4. Wet ingredients- In another large bowl take warm water, add melted butter, vinegar and vanilla extract. Mix well.
  5. Add dry ingredients to the wet ingredients. Stir gently till the ingredients come together and you get a smooth batter.
  6. Divide batter evenly among 12 muffin cups.
  7. Now add a tablespoon or more of cream cheese mix into the centre of each cupcake.
  8. Bake for 25 minutes. The cupcakes should feel springy to the touch and a toothpick inserted into the chocolate part should come out clean.
  9. Remove from the oven and cool on a rack. Serve when cold.

My Tip:

If you do not have cream cheese, take a 200gms paneer slab. Add 150 gms curd. Churn in a blender to get a smooth paste. Take this mixture in a muslin cloth. Keep overnight in a refrigerator. Measure the quantity required and use in the recipe.
