ABOUT Ada Payasam RECIPE

This dessert is prepared in Kerala and Kanyakumari. We get ada made from rice, wheat and maida. I have used wheat ada in this recipe.

Ingredients Serving: 4

  1. Ada 3 cups
  2. Jaggery 3/4 Cup
  3. Coconut Milk (Thick) 1/2 Cup
  4. Coconut chopped 1 tbsp
  5. Cashew 1 tbsp
  6. Raisins 1 tbsp
  7. Cardamom powder 1/2 tsp
  8. Ghee as required
  9. Water as required

Instructions

  1. Fry cashews, raisins and chopped coconut pieces in ghee and remove it.
  2. Fry Ada in the same pan with the leftover ghee.
  3. Add required water and allow it to cook for 10 minutes.
  4. Add jaggery to boiling water and allow it to dissolve and filter any impurities.
  5. Pour the jaggery mixture to ada and cook till the ada is well cooked.
  6. Add cardamom powder, coconut milk.
  7. Switch off immediately.
  8. Garnish with fried cashews, coconut and raisins.
