Beetroot Curd Rice

Ingredients to make Beetroot Curd Rice

  • 2 cups - cooked rice
  • 1 - beetroot boiled with skin
  • salt to taste
  • sugar to taste
  • 1 cup - thick curd
  • 1 tbsp - oil or ghee
  • 1 tsp - mustard seeds
  • 1 tsp - cumin seeds
  • 1 tsp - chana dal
  • 1 tsp - peanuts
  • 1 tsp - urad dal
  • few cashews
  • curry leaves - 5
  • Green chili whole - 1 or 2
  • Red chili whole - 2 to 3
  • Chopped coriander leaves
  • A pinch of hing

How to make Beetroot Curd Rice

  1. Soak all the dals for 10 minutes before you start the tempering.
  2. Mix rice and curd together.
  3. Add hing, curry leaves and soaked dals and peanuts
  4. Add mustard seeds, cumin seeds and let it splutter.
  5. Add cashew , green chili, red chili.
  6. Add chopped or grated beetroot.
  7. Add the tempering to rice and curd mixture.
  8. Add salt and sugar to taste
  9. Garnish with chopped coriander leaves

My Tip:

For Beetroot boiled with skin, just 2 minutes in pressure cooker.
