Phirni is a popular Indian sweet Dish which is a must on every occasion and feast. This dish is made of rice, full cream milk, and sugar and is very delicious.

Ingredients Serving: 5

  1. Full cream Milk 2 litres
  2. Long grained basmati rice 1/3 cup (soaked for 1 hour)
  3. Saffron few strands
  4. Sugar 1 cup
  5. Green cardamom( elaichi) 4 to 5 pods (crushed)


  1. Drain the soaked rice and dry on a towel
  2. Grind the rice in a grinder to get a coarse powder
  3. Heat milk in a heavy bottomed pan and bring to a boil.
  4. Reserve 2 tbsp of milk in a bowl. Dry roast saffron strands for 10 seconds and soak it in reserved milk
  5. Simmer the milk and add ground rice in it and let it cook on medium flame.
  6. Keep stirring so that lumps don't form and cook for 15 to 20 minutes
  7. Now add dissolved saffron and mix well.
  8. Cook for 4 to 5 minutes and add sugar and mix well . Scrape the sides of vessel
  9. Add cardamom powder and cook for 4 to 5 minutes and turn off the heat
  10. Let it cool. Refrigerate for 1 to 2 hrs and serve chilled
