Ingredients Serving: 10

  1. Low fat cream 1 and a 1/2 cup
  2. powdered sugar 1/2 cup
  3. Chilled milk 1/2 cup
  4. Butter scotch essence 1/4 tsp
  5. Yellow food colour few drops
  6. Praline 1 cup
  7. FOR PRALINE
  8. Granulated sugar 1/2 cup
  9. Chopped cashews 1/4 cup
  10. Butter 1 tbsp

Instructions

  1. Keep the cream, bowl and blades of electronic beater in freezer for about half an hour. First of all we have to prepare the praline and for this take sugar in a nonstick pan and start caramalising it on medium heat
  2. Add butter when sugar turn golden say around after 5 minutes and lower down the heat sauté for a minute and add cashew
  3. After a minute remove from the heat and transfer to a greased plate
  4. Let it rest for 8-10 minutes at room temperature. Now press the centre of the plate from bottom to lift the mixture
  5. Break it into pieces and roll into powder using a rolling pin
  6. Take out the cream and bowl with blades. Start whisking the cream till soft peaks say around 5 minutes on medium speed
  7. Add powder sugar,essence and whisk again for 3 minutes till semi stiff peaks
  8. Gently fold in the milk, colour, and half of the praline
  9. Transfer it into an container and freeze overnight
  10. Serve chilled with rest of the praline on to the ice-cream
