Ingredients Serving: 4

  1. Boiled noodles - 1 cup
  2. Chopped red bell peppers - 1/4 cup
  3. Chopped yellow bell peppers - 2 tbsp
  4. Chopped scallions/spring onions - 3 tbsp
  5. Toasted sesame seeds - 1/2 tsp
  6. Toasted peanuts - 2 tbsp
  7. Vinaigrette :
  8. Sesame seeds Oil - 3 tbsp
  9. Peanut butter - 1 tsp
  10. Soy sauce - 1 tsp
  11. Vinegar - 1 tsp
  12. Honey - 1/2 tsp
  13. Kosher salt
  14. Pepper powder - 1/4 tsp
  15. Grated ginger - 1/4 tsp
  16. Grated garlic - 1/4 tsp

Instructions

  1. Boil the noodles and strain them, keep aside.
  2. Similarly chop up the vegetables and keep aside.
  3. To make the vinaigrette, whisk the sesame seeds oil with Vinegar, honey, soy sauce and peanut butter till it is mixed completely.
  4. Now add the kosher salt, pepper powder, grated ginger, grated garlic to the above mix and whisk it.
  5. Now mix the noodles, veggies into the vinaigrette.
  6. Plate up the noodles salad and sprinkle the roasted peanuts and sesame seeds on top.
  7. Serve.
