Ingredients to make Wholesome Salad

  • chicken breast - 1
  • Iceberg lettuce
  • Basil leaves
  • Cherry tomatoes
  • Whole olives ( I used the one available in any supermarket)
  • Good quality walnuts
  • Blue cheese dressing bought from supermarket
  • Parmesan bought from supermarket
  • A day or two old bread (both brown and white can be used)
  • Oregano for chicken marination
  • cucumber- 1
  • peppercorn- 1 tsp
  • oil (for grilling)
  • Olive oil for salad dressing
  • salt as needed for taste

How to make Wholesome Salad

  1. Preparation of the grilled chicken breast: Marinate chicken with grounded peppercorn, olive oil, salt and oregano. Keep aside for 30 minutes.
  2. In a bowl (big salad bowl) add cold water and add ice cubes in it. Now clean the lettuce, soak in the bowl, add whole cherry tomato and cubes of cucumber. Keep them in the refrigerator till you start mixing the salad.
  3. After 30 minutes, brush a griller with oil and and place the chicken breast. Cook till both the side get brownish strips. For Vegetarians: You can replace the chicken breast with Paneer blocks/ cubes.
  4. Take 4-5 slice of brown bread preferably a day or two old, cut them into small square and just grill them on the same hot grilled which you used for chicken/ Paneer.
  5. Final Step: Take a clean, big salad bowl, make lettuce bed using the cold lettuce from refrigerator, place cherry tomatoes, cucumber cubes, cubes of grilled chicken breast, grilled bread cubes, whole olives. Now add roughly chopped walnuts, basil leaves, blue cheese dressing, parmesan cheese, virgin olive oil,(optional) salt and pepper. Mix all the ingredients and serve for a healthy dinner.
