ABOUT Kalimati RECIPE

Kalimati is a sweet, that is usually prepared here in Tanzania (Africa). This is usually enjoyed during the holy month of Ramadan. You would find it sold on streets and people would buy it in large quantity. Relishing and mouth watering

Ingredients Serving: 10

  1. 1 cup all purpose/ plain flour
  2. 1/2 cup yogurt plus a little water
  3. 1 tbsp ghee or butter
  4. 1 tsp leveled instant yeast
  5. Ingredients for sugar syrup:
  6. 1 cup sugar
  7. 1/2 cup water
  8. 1/2 tsp cardamom powder
  9. Saffron threads few strands

Instructions

  1. Boil syrup and cool completely
  2. Mix flour with the above ingredients, and beat thoroughly using your hand. It should be thick enough for you to be able to pick it without flowing down between the fingers
  3. It shouldn't be so thick such that it forms dough like texture but it shouldn't be runny and yet not too thick
  4. Cover and let it rise for about half an hour.
  5. After half an hour, touch some oil with your fingertips and mix the mixture again
  6. Heat oil in wok, then pick small portions and drop in the hot oil, then immediately lower the flame and fry on low flame. Stirring the kalimatis continuously.
  7. Stir the kalimatis continuously so that they color on all sides and get super crunchy.
  8. Right after you remove from the oil, place the kalimatis directly into the cooled sugar syrup
  9. Serve hot and enjoy!!
