Ingredients Serving: 5

  1. 1 cup amaranth flour (1/4 amaranth flour for rolling)
  2. 1 tbsp arrowroot flour
  3. 1 tbsp flaxseed ground or whole (optional)
  4. 1 tbsp ground dried chives (any desired herb)
  5. 2 tbsp sea salt
  6. 1/2 cup water
  7. 1/2 tbsp olive oil (as per choice)

Instructions

  1. Mix dry ingredients in a large bowl together.
  2. In a seperate bowl combine water & oil & beat with a fork.
  3. Slowly add water/oil to dry ingredients turning the flour slowly.
  4. Mix ingredients until firm ball but not too sticky.
  5. Oil a flat baking pan & roll out (or pat with hands) small balls of dough until 1/8th inch thick using extra flour to keep them from sticking.
  6. Place in oven for 8 minutes (each oven is different, so it could take upto 10 minutes also)
  7. Remove & flip the flat breads, put them back in the oven for another 4-5 minutes.
  8. They are served well warm or cold, refrigerate any extras.

First of all, I assume the 2 tbsp of salt was a typo. I went against my better judgment and did it anyway because this is my first time baking with amaranth. It was inedible. 🤣 A very expensive waste of amaranth flour. If it had been edible, a baking temperature would have been helpful. Huge fail, but we may try it again with 2 tsp of salt instead of 2 tbsp.
