Lentil and Moong Sprouts Stuffed Dosa.

Ingredients Serving: 6

  1. Masoor dal 1/4 Cup
  2. Moong dal 1/4 Cup
  3. Channa dal 1/4 Cup
  4. Toor dal 1 /4 Cup
  5. Urad dal 1/4 Cup
  6. Rice( brown + white) 3 &1/2 cup
  7. Moong Sprouts + Masoor Sprouts 1 cup
  8. Salt to taste
  9. Curd 2 tbsp
  10. For Chutney:
  11. Fresh Coconut 1 cup
  12. Roasted split Bengal gram 1/2 cup
  13. Garlic crushed 1 tsp
  14. Green chilli crushed 1 tsp
  15. For sambhar:
  16. Toor dal 1 cup
  17. Onion chopped 1
  18. Tomato chopped 1
  19. Oil for seasoning
  20. Coriander leaves finely chopped
  21. Asafoetida and mustard seeds for seasoning
  22. Curry patta few
  23. Sambhar masala 1 tsp
  24. Salt, turmeric, chilli to taste
  25. For potato veggie ( especially for kids)
  26. Potatoes 300 grms
  27. Onion chopped 1/2
  28. Oil for seasoning.
  29. Coriander leaves finely chopped 1 /2 tsp
  30. Asafoetida and mustard seeds for seasoning
  31. Salt, turmeric, chili powder to taste

Instructions

  1. Soak dal and rice separately over night.
  2. Grind Rice with a little amount of water. After it grinds half dal.
  3. Start adding some at a time giving space to grind well.
  4. Keep in a warm place. Add some methi dana ( fenugreek seeds).
  5. Pressure cook Toor dal and season after cooling. Adjust masala.
  6. Boil potatoes and prepare vegetable, adjust masala.
  7. Coarse grind fresh Coconut, Daaliya ( roasted split Bengal gram), garlic and green chili to make chutney.
  8. Now it's time to make dosa.
  9. Grind Sprouts and keep aside.
  10. Take some batter in a big bowl. Add little curd and salt. Make batter a bit thicker than pancake batter.
  11. Heat a nonstick griddle, wet it with a soaked cotton cloth and spread dosa batter.
  12. Spread 1/2 tsp Sprout mix over it and spread a thin layer of dosa batter over it.
  13. Spread 1/2 tsp oil and flip over as one side is cooked brown.
  14. Let other side cook for a minute.
  15. Your dosa is ready. Serve with Sambhar, chutney, and veggie.
