ABOUT Kesar Doodh Peda RECIPE

Milk Peda is traditional Indian sweet that is loved by all since ages. In today’s world where many fancy sweets have captured the sweet shops, peda has it’s own traditional significance, as they say whenever there’s a good news in family, peda is the first thing that is served to all in terms of celebration. Few months back i had made Chocolate Doodh Peda which was loved by my son a lot. But as many of my family members are not chocolate lovers hence i thought to make the traditional saffron infused milk peda.

Ingredients Serving: 10

  1. 1 cup Powdered Milk
  2. 1 cup condensed milk
  3. 3 tbsp ghee
  4. 1/2 tsp Cardamom powder
  5. 8 strands Saffron
  6. 2 tbsp Milk

Instructions

  1. Soak saffron in milk for 10 - 15 mins o refrigerate over night for better color results.
  2. Heat ghee in a thick bottom non stick pan and add condense milk to it and allow it to cook in low flames till it gets a boil.
  3. Now add powdered milk and keep stirring vigorously to avoid forming lumps. Break if any for smooth finish. Keep stirring continuously till the mix starts to thicken.
  4. Now add saffron infused milk and cardamom powder and stir nicely. The mix will start to loosen, so keep stirring till it thickens back again.
  5. Gradually the mix will start gathering and folding up leaving from the sides of the pan.
  6. If the mix forms a dough and rolls into a smooth ball, that means its ready. But if you find the mix sticky then stir and cook on low heat for another 2-3 mins.
  7. Once the mix is ready, turn off the gas and remove the pan from the stove. Set aside to cool.
  8. When the mix is warm, grease your hands with ghee and pinch a lime sized ball, roll and flatten to shape into a disk.
  9. Make impressions on it with a flower stencil or just keep it simple by making a dimple with your index finger in the center.
  10. Garnish/ decorate with chopped pistachios (optional) or saffron strands.
