Ingredients to make Khasta nan khatai

  • maida 1 cup
  • Rawa or sooji 1/2 cup
  • Powdered sugar 3/4 cup
  • ghee 3/4 to 1 cup (ghee in semi solid form)
  • besan 1/4 cup
  • elaichi powder
  • Almonds or pistachios

How to make Khasta nan khatai

  1. Add the maida, sooji, besan and powdered sugar in a bowl. Pour in the ghee, start mixing till you get a little crumbly dough.
  2. Bring the dough together. Please do not add any water. Wrap the dough in a plastic wrap and let it rest for 15 mins.
  3. Once out of the fridge start making flat balls using your palms. Make a smooth peda like shape.
  4. Using a butter paper or parchment paper put it on a baking tray and place these nan khatais at a good distance as they expand while baking.
  5. Make a cross in the center by using a knife to give it that nan khatai look. Fill in some finely chopped pistachio or almond in the center . Put some elaichi powder too.
  6. Now keep this nan khatai tray in the refrigerator for 15 mins and then bake at 180 degrees in the oven for 15 to 20 mins.
  7. Once done you will find them a little soft, so let them cool down and then they will get their perfect texture.

My Tip:

Note please do not over bake.
