Ingredients Serving: 4

Condensed milk 1 can
Hung curd or greek yoghurt 350 gms
Fresh cherry 1/2 cup + 1/4 cup
Berries 3/4 cup
Corn flour 1 1/2 tsp optional
For Chery compote :
Fresh cherry 1/3 cups
Water 2 tsp
Sugar 3 tsp
Corn flour 1 tsp

Instructions

Wash and cut fruits, chop them and make puree, without water
Strain the puree
Strain curd, remove water
Mix hung curd and fruits puree
Now mix condensed milk and corn flour, if using
Blend for 2-3 Mins
Now pour in ramekin bowls, or any other microwave safe bowl, take a rectangular tray, fill it with water, up to half. It will work as a water bath, keep bowls inside the tray.
Preheat the oven for 15 mins for 180 degrees centigrade
Now bake them for 30 mins, switch off oven. tap slowly the bowls to check they are properly baked or not
Keep Bhapa doi inside the oven for 30 mins more
Now cool them for 30 mins, keep in the freezer for 8 hrs.
For making cherry compote, deseeded cherries, now mix corn flour with 1 tsp water, keep aside
Heat a nonstick pan, add cherries, sugar and water 2 tsp
Saute and cook until cherries are soft
Now add corn flour
When the mixture gets thickened switch off gas
When it's cooled down, keep in the freezer
Garnish bhapa doi with cherry compote
Serve chilled
