ABOUT Khira Gaintha ( milky rice dumplings with coconut stuffing) RECIPE

Khira gaintha is a traditional odia sweet dish which consists of rice flour dumplings cooked in cardamom flavored milk. Here I have used the stuffed rice flour dumpling to give a twist to the authentic one. The stuffing is a mixture of jaggery and grated coconut.

Ingredients Serving: 4

  1. Rice flour 1 cup
  2. Milk 1 litre
  3. Sugar 1/2 cup
  4. Coconut (grated) 1 cup
  5. Jaggery (grated) 1/4 cup
  6. Salt 1 pinch
  7. Ghee 2 tablespoon
  8. Cardamom powder 1 tablespoon

Instructions

  1. Take water in a deep pan along with salt and start boiling.
  2. Gradually add rice flour to the boiling water.
  3. Stir continuously to avoid any lumps being formed.
  4. Keep the flame on low, cover the pan with a lid and cook for 5 minutes.
  5. Switch off the flame.
  6. Transfer the dough to a plate and let it cool.
  7. Meanwhile, take grated coconut (keep 1 tablespoon grated coconut aside for further use) and grated jaggery in another pan.
  8. Stir fry for 5 to 10 minutes on medium flame.
  9. Switch off the flame and keep aside the stuffing to cool.
  10. Now knead the cooled dough with ghee so that the dough becomes more softer.
  11. Next take 1 teaspoon of soft dough in palm, flatten little, put 1/4 teaspoon stuffing at center.
  12. Then shape the flatten dough as a ball (around 1/2 inch size) keeping the stuffing at center.
  13. Similarly make balls out of the soft dough and keep aside.
  14. In another deep pan, boil the milk on low flame.
  15. Add sugar, cardamom powder and mix well.
  16. Next add the stuffed balls into the milk and simmer for 15 to 20 minutes on low flame or until milk thickens.
  17. Add 1 tablespoon grated coconut and mix well.
  18. Switch off the flame and serve cold !
