Ingredients Serving: 4

  1. 1 cup vermicelli
  2. 1 cup chopped tomatoes
  3. 1 cup chopped peppers
  4. 1 cup sweet corn
  5. 1 medium onion chopped
  6. 9-10 Garlic cloves
  7. 3 Kashmiri red chillies
  8. 2-3 tbsp lemon juice
  9. 4-5 tbsp oil
  10. 10-12 curry leaves
  11. Salt to taste
  12. 3-4 tbsp oil

Instructions

  1. Roast the vermicelli in 1 tbsp of oil till it's crispy and golden in colour. Remove it in a plate and keep it aside.
  2. Dry grind Kashmiri red chilli and garlic. It will have a coarse consistency that's perfect.
  3. Add 3-4 tbsp oil in the same sauce pan. Add curry leaves followed by onion..sauté till it turns golden in colour.
  4. Add peppers and sweet corn, cook for a minute. Add the garlic and red chilli paste. Mix it well.
  5. Add the chopped tomatoes. Cook till it turns tender.
  6. Add 2 tbsp salsa sauce. Mix it well and cook for a minute. Add salt to taste, mix it. The oil should start to separate.
  7. Add the vermicelli, mix it. Add 2 cups of water. Keep the flame on a medium heat. Cover and let it simmer for 5 minutes or till it's completely cooked. Add the lemon juice and garnish with chopped coriander leaves
  8. Delicious mexican style vermicelli is ready to serve...
