Ingredients Serving: 6

  1. 250 gm butter (unsalted)
  2. 250 gm dark chocolate (60-70%)
  3. 250 gms (2 cups) almond flour
  4. 5 eggs (separated)
  5. 150 gm (2/3 cup) sugar
  6. 4 tsp baking powder
  7. 5 tbsp hot water

Instructions

  1. Preheat oven at 180 degree. Grease and line a large baking pan (26-28cm).
  2. Melt the chocolate and butter in a double boiler, till smooth.
  3. Whisk sugar and yolks together with the hot water, till smooth.
  4. Whisk the egg whites till firm.
  5. Add the warmed chocolate to the egg-yolk sugar mixture.
  6. Mix the baking powder to the amond flour and add to the chocolate cream.
  7. Fold the egg whites gently to the mixture, incorporating them from bottom upwards.
  8. Pour the batter into the lined pan and bake for 35-40 mins. Let it cool. Sprinkle with icing sugar and serve with clotted cream.
