ABOUT HONEY GINGER GLAZED PUMPKIN AND BANANA BREAD RECIPE

This soft and light pumpkin banana bread has a moist crumb and is drizzled with a sweet honey ginger glaze !!

Ingredients Serving: 5

  1. All purposes flour - 2 1/2 cups
  2. Baking powder - 1teaspoon
  3. Baking soda - 1teaspoon
  4. Salt - 1teaspoon
  5. Ground Cinnamon - 1teaspoon
  6. Ground ginger - 1teaspoon
  7. Ground nutmeg - 1/2 teaspoon
  8. Ground cloves - 1/2 teaspoon
  9. Granulated sugar - 1 1/2 cup
  10. Oil - 1 1/2 cup
  11. Eggs - 2 no
  12. Pumpkin puree - 1/2 cup
  13. Mashed ripe bananas - 1 no
  14. HONEY GINGER GLAZED
  15. Honey - 1/2 cup
  16. Softened butter - 1tablespoons
  17. Ginger chopped - 2 tablespoons
  18. Chat masala powder - 1teaspoon

Instructions

  1. Preheat the oven 180°c for 10 minutes .
  2. In a mixing bowl add flour , baking powder , baking soda , salt , cinnamon , ginger , nutmeg and cloves whisk to combine .
  3. In another bowl add sugar and oil and beat a hand blender until combined . Add eggs one at a time , beating after each addition .
  4. Add half the flour mixture , beating on low speed .
  5. Add the remaining flour mixture then add the pumpkin puree and mashed banana and stir a until smooth mixture .
  6. Now spread the batter in a grease loaf pan .
  7. Bake at 35 minutes , until a toothpick inserted into the centre comes out clean .
  8. Place pan on wire cooling for 10 minutes . Remove bread from the pan and let cool completely .
  9. Make HONEY GINGER GLAZE
  10. Add butter in a pan in low flame , when butter is melted add ginger , honey and chat masala mix well and switch off the flame .
  11. When ready to eat , drizzle bread with glaze and serve.
