ABOUT Baked Honey Soy Chicken RECIPE

This dish is absolutely lip-smacking – sweet and spicy and sour; bursts of flavour all the way! The best bit – it’s easy and quick enough for a weeknight dinner and just indulgent and delicious enough to cook up over the weekend!

Ingredients Serving: 3

  1. Bone-in Chicken – 750 g
  2. Olive Oil – 2 tbsp + 1 tbsp for greasing
  3. Honey – 5 tbsp
  4. Dark Soy Sauce – 3 tbsp
  5. Ginger – 1-inch piece, minced
  6. Garlic – 6 cloves, chopped
  7. Chilli flakes – 1 tbsp
  8. Salt & Pepper – to taste
  9. Spring Onions – chopped, for garnish

Instructions

  1. In a large bowl, mix together 2 tablespoons of olive oil, honey, dark soy sauce, ginger, garlic, chilli flakes, salt and pepper until the marinade comes together.
  2. Marinate the chicken with the honey-soy marinade, then cover and refrigerate for 30 minutes or more (you could let it marinate overnight if time permits).
  3. Preheat the oven to 200 ºC. Grease a deep roasting pan with the remaining olive oil. Then place the chicken pieces and pour any remaining marinade over it.
  4. Pop the pan into the oven for 30 minutes. Half-way through the baking process, turn the chicken pieces over to ensure they cook evenly and remain tender and juicy.
  5. Once the chicken has baked for 30 minutes, turn the oven to the broiler setting and leave the chicken to brown for about 7–10 minutes.
  6. When the chicken has turned a gorgeous, caramel hue, take it out of the oven and garnish with chopped spring onions.
