About Plum Swirl Cheesecake Recipe

This is a perfect cheesecake for those who do not like very sweet desserts. The plum preserve adds the right amount of sweetness and the tartness, ohh yumm!

Plum Swirl Cheesecake

Ingredients to make Plum Swirl Cheesecake

  • For the Base:
  • 12-14 Digestive Biscuits
  • 4 Tbsp Melted butter
  • 2 Tbsp Granulated sugar (Optional)
  • For the Cake:
  • 1 Cup cream cheese
  • 3/4 Cup Heavy cream
  • 2 Tsp Gelatin
  • 2 Tbsp water {normal temp}
  • 1/8 Cup Condensed Milk or Desired Sweetness
  • For the Topping:
  • plum Preserve {or any other as you desire}

How to make Plum Swirl Cheesecake

  1. Grease 8 inch springform pan and preheat your oven at 350C.
  2. Pulse digestive biscuits to fine crumbs. Add sugar (optional) and melted butter to it and combine. Add this mixture to springform pan. Press gently and bake for 8-10 minutes until light brown.
  3. Melt on double boiler by soaking gelatine in water for 2 minutes.
  4. Whip heavy cream on medium speed, until soft peaks appear. To this add condensed milk, melted gelatine, cream cheese and whisk until smooth.
  5. Pour this over biscuit base. Add plum preserve and using a skewer, swirl randomly. Leave this in fridge to firm for at least 4 hours or overnight.
  6. Before serving transfer cheesecake from freezer to fridge for 30 minutes.

My Tip:

Cover your tin with cling wrap before popping in the freezer. It prevents from the ice crystals settling on the cake.
