ABOUT Lemon Butter Cake RECIPE

There is nothing better than in this world than the smell and flavour of butter cake.

Ingredients Serving: 6

  1. Amul butter 250 gms or 1 cup
  2. 1 1/2 cups all purpose flour
  3. 1 cup sugar
  4. Juice and zest of 2 lemons (small)
  5. 2 eggs (yolks and whites separated)
  6. 1 tsp baking powder
  7. A pinch of salt
  8. 1 tsp vanilla or 1/2 tsp lemon essence


  1. Line a cake tin with parchment paper and grease with oil, make sure the corners are covered. Make sure all the ingredients are at room temperature before you begin.
  2. Pre heat the oven at 160 degree centigrade. In a dry bowl sift together flour and baking powder.
  3. In another dry bowl take sugar and add in the lemon zest and mix throughly with your hand. Beat the butter in another bowl with an electric mixer.
  4. Add in the sugar and whisk till fluffy. Add in the egg whites and then the yolks. Fold in the flour mixture with a spatula.
  5. Follow the technique of 'cut 'n' fold' to get a really light batter. If it gets too stiff add in more melted butter.
  6. If you want you can add essence here. Sprinkle just a tiny pinch of salt and transfer the contents to the cake tin.
  7. Bake at 150 degree centigrade for 40 to 45 minutes and do the toothpick test to confirm when the cake is baked.
  8. Tastes best when had warm.
