Ingredients Serving: 2

  1. Small size brinjal = 750 gms
  2. Chopped coriender = 1 cup
  3. Green chillies = 8 no.
  4. Ginger. = 1"piece
  5. Cumin seeds = 1tsp
  6. Salt = 1tsp
  7. Oil = 3 tbsps

Instructions

  1. Wash the brinjals. Slit them into 4 without breaking them and soak in salted water.
  2. Grind coriander+ green chillies+ginger+ cumin seeds+ salt into a smooth paste. Not liquidy.
  3. In a pan heat oil.
  4. Now stuff the brinjals with this coriander masala paste.
  5. Fry brinjals until become light golden brown.
  6. Reduce the flame.
  7. Cover like this
  8. Cover the kadhai with the plate , pour 1 glass of water into plate.
  9. Let it boil, about 10 to 12 minutes.
  10. Stir it twice slowly and carefully .
  11. After cook the curry , remove the cover.
  12. Fry the curry couple of minutes.
  13. Dish out the curry.
