ABOUT CHARCHARI #Main Contest#Better Butter #5 Veggies RECIPE

A typical bengali side dish made with vegetables, to be served with some dal rice.

Ingredients Serving: 2

  1. Diced potato - 1 large
  2. Chopped eggplant - 1 cup
  3. Chopped pumkin - 1 cup
  4. Chopped beans - 1 cup
  5. Chopped rigde gourd - 1 cup
  6. Chopped poi leaves - 1 cup
  7. Chopped onion - 1
  8. Ginger garlic paste - 1 tsp
  9. Panch phoran - 1/4 tsp
  10. Turmeric powder - 1/4 tsp
  11. Red chilly powder - 1 tsp
  12. Salt - to taste
  13. Sugar - 1/2 tsp
  14. Oil - 2 tbsp

Instructions

  1. Heat one tbsp oil in a pan.
  2. Fry all the veggies in batches and strain it.
  3. Again heat one tbsp oil in a pan.
  4. Add panch phoran to crackle.
  5. Add onion and stir fry 2 - 3 mins.
  6. Add ginger garlic paste and saute for one mins.
  7. Add all the veggies and half cup of water and cook for 5 mins.
  8. When water absorb it and all veggies are cooked add salt and mix well.
  9. Ser hot with rice.
