ABOUT Appam with Mutta Curry RECIPE

Delicious palappam with Mutta curry is one of the traditional and favourite breakfast in Kerala. I love appam with either Mutta curry, stew or mutton curry. I have made this curry without coconut. For coconut version, refer to my previous recipe.

Ingredients Serving: 3

  1. For Appam
  2. 1 cup raw rice/idli rice
  3. 1/2 cup cooked rice
  4. 1/4 cup grated coconut
  5. 3/4 cup coconut water
  6. Water as required for batter
  7. 1 teaspoon instant yeast
  8. 2 teaspoon sugar
  9. salt to taste
  10. For Egg curry
  11. 3 boiled eggs
  12. 1.5 tbsp coconut oil
  13. 1 small onion chopped
  14. 1 tsp ginger garlic paste
  15. 1.5 tomatoes pureed
  16. Salt to taste
  17. 1/2 TSP sugar
  18. 1/2 tsp fennel seeds
  19. 1 dry red chilli
  20. 1 sprig curry leaves
  21. 1/2 TSP pepper
  22. 1/2 TSP cumin powder
  23. 1 tsp red chilli powder
  24. 1 tsp coriander powder
  25. 1/2 TSP turmeric
  26. 1 tsp garam masala

Instructions

  1. CLEAN AND SOAK RICE FOR 4-5 HOURS. DRAIN EXCESS WATER. GRIND RAW RICE, COOKED RICE, COCONUT GRATED, COCONUT WATER AND WATER TO FORM A SMOOTH BATTER.
  2. ADD YEAST AND SUGAR TO BATTER. MIX WELL. COVER AND FERMENT FOR 6-8 HOURS. STIR FERMENTED BATTER WELL. ADD SALT AND WATER TO FORM POURING CONSISTENCY BATTER.
  3. POUR LADDLE OF BATTER IN HOT APPA CHATTY. SKIP OIL APPLICATION FOR NON STICK PAN. TWIRL THE CHATTY IMMEDIATELY AND SPREAD. THIN AT EDGES, THICK AT CENTRE. COVER AND SIMMER.
  4. WHEN APPAM IS COOKED, IT WILL START COMING OFF AND EDGES WILL BE CRISP. NEVER FLIP AND COOK
  5. MAKE WEDGES IN EGG. HEAT OIL IN A PAN AND ROAST FENNEL SEEDS, CURRY LEAVES AND DRY RED CHILLI
  6. ADD ONIONS AND GINGER GARLIC PASTE. SAUTE UNTIL ONIONS ARE TENDER. ADD TOMATO PUREE AND SAUTE UNTIL OIL STARTS LEAVING THE SIDES
  7. ADD SPICE POWDERS, SUGAR AND SALT. MIX WELL. ADD WATER AND BRING TO BOIL
  8. ADD BOILED EGGS, COVER AND COOK FOR 10 MINUTES. ADD CORIANDER LEAVES AND MIX. CURRY IS READY.
  9. SERVE APPAM WITH EGG CURRY AND HOT CUP OF TEA. ENJOY.
