This is a dessert with balance of flavour. Tangy lemon curd filling is.balance with white chocolate ganache
It is awesome.
For choux pastry heat a sauce pan . To this add butter and let it melt ..Also add sugar to this and let it dissolve.
Then add flour to water and continuously mix till it start leaving sides of sauce pan .
Let it cool down .
Now add lightly beaten egg to this and whisk till creamy consistency is obtained
Mixture should fall in ribbon form
Preheat oven at 200 degree
Now fill flour mixture in a piping bag .
Cover baking tray with parchment paper
Pipe out eclairs of 3-4 inch on.baking tray
Bake in a preheated oven at 200 degree for 15mins
Then lower the temperature to.180 degree and bake for another 25 mins till eclairs are dry from inside
For lemon curd.
Heat a sauce pan with 1/4 th water filled in it
Now in.a.bowl add all the.lemon curd ingredients and keep mixing .
Cook till mixture thickens and start coating back of spoon.
Cool it and fill in.a.piping bag
For white chocolate ganache
In a bowl combine both the ingredients Heat it in.microwave for 30 sec and mix. Repeat till both the ingredients are well combined. Let it cool down
Then.fill it on.a.piping bag and keep ready
Now divide eclairs in two parts. Pipe lemons curd filling on.one part and cover it with another part.
Now pipe with white chocolate ganache swirls on eclairs and garnish it with colourful sprinklers
