ABOUT Shahi kesar phirni ! RECIPE

Phirni is a typical North Indian dessert made during majority of the occasions that includes Karwa chauth, Diwali and so on. Phirni is regularly made using Rice and Milk but adding Khoya and saffron in Phirni Recipe makes phirni a Shahi Kesar variant taking this to yet another level. Prepare this shahi kesar phirni and allow to be praised from your guest when you organise get togethers at home, or when there are relatives visiting your place during this festival time..

Ingredients Serving: 8

  1. Milk 1 1/2 litre
  2. 1/4 cup : Rice 1/4 cup (long grain), soaked for 30 minutes
  3. Khoya (Mawa) 1/4 cup
  4. Sugar 1/3 cup
  5. Cloves 2
  6. Ghee 1 teaspoon
  7. Saffron strands 3 pinch
  8. Cardamom Powder 1 teaspoon
  9. Mixed nuts , chopped, to garnish

Instructions

  1. To begin making Shahi Kesar Phirni Recipe, wash the rice and soak in water for 20 to 30 minutes.
  2. Drain the water and grind in a blender into coarse grainy paste.
  3. Soak the saffron strands in 2 tablespoon of warm milk.
  4. Heat ghee in a deep, thick bottomed saucepan or handi, add cloves and saute for few seconds until fragrant.
  5. Add in milk, bring it to a boil and simmer to reduce a bit.
  6. Add the ground rice paste, saffron milk continue cooking until the rice gets cooked and milk is reduced to half.
  7. Add khoya, sugar, cardamom powder and cook further to right consistency. It has to be flowy yet thick.
  8. Just keep in mind that it thickens further once cooled and adjust consistency accordingly. If you want, you can add more boiled milk at this stage to thin it down.
  9. Transfer the phirni into serving dishes and chill in refrigerator. Garnish with chopped nuts, rose petals, saffron strands according to preference and serve chilled. Authentic Phirni with a shahi twist is ready to serve.
