Blueberry Coffee Cake

Ingredients to make Blueberry Coffee Cake

  • all purpose flour 2 and 1/2 cup
  • Custard powder ½ cup
  • Coffee extract ½ cup
  • Milk 1 cup
  • Fresh blueberries 1/2 cup
  • eggs 2
  • Powdered sugar 1 and 1/3 cup
  • Baking powder 2 and 1/2 teaspoon
  • Oil (use sunflower or olive oil only or a mixture of both)1/2 cup
  • Vanilla essence about 1 teaspoon

How to make Blueberry Coffee Cake

  1. Sieve all the dry ingredients and mix them together.
  2. Mix milk and coffee extract.
  3. Break 2 eggs and whisk together.
  4. Add vanilla essence to it.
  5. Mix all the ingredients together (i.e. The dry with the wet )
  6. Blend till a nice consistency is achieved.
  7. Grease a baking tin and Preheat oven to 180 degrees C for 10 minutes.
  8. Pour the batter to the cake tin and gently tap from sides.
  9. Bake the cake for 45 to 50 minutes.
  10. Let it cool down before you cut
