Lemon and mint Lamington

Ingredients to make Lemon and mint Lamington

  • For lemon sponge
  • flour 1 cup
  • Powdered sugar 3/4 cup
  • butter + 2 tablespoon oil
  • lemon zest 1 teaspoon
  • lemon juice 2 teaspoon
  • eggs 3
  • Few drops of lemon yellow colour
  • Baking powder 1 teaspoon
  • For lemon and mint butter cream
  • Icing sugar 1 cup
  • butter1/2 cup
  • lemon juice 1 1/2 teaspoon
  • Few drops of mint juice or essence
  • For soaking
  • sugar Syrup made by dissolving 2 teaspoon sugar in 1/2 cup water
  • For coating
  • dessicated coconut 1 cup

How to make Lemon and mint Lamington

  1. Foreign sponge
  2. Cream butter oil and sugar(reserve 2 tablespoon)
  3. To this add lemon zest and beat till sugar is completely dissolved
  4. Add lemon juice , lemon color and flour and baking powder to it and mix well
  5. In another bowl separate egg white and egg yolk .
  6. Add egg yolk to sugar butter mixture and beat well
  7. Now with clean blender blade beat egg white with reserved sugar till soft peaks forms
  8. Now fold egg white in flour mixture gently
  9. Grease a square baking tin and pour the batter in it
  10. Bake in a preheated oven at 180 degree for 30-35 mins or till skewer comes out clean
  11. For lemon and mint butter cream beat all the ingredients till it becomes fluffy
  12. After lemon sponge is cooked slice in two parts.
  13. Soak it with sugar syrup. Frost cake with lemon butter cream
  14. Coat completely with dessicated coconut
  15. Cut in pieces and serve

My Tip:

Seperate egg white to make lemon sponge airy and light
