ABOUT Butterscotch polka dots iced cookies RECIPE

Butterscotch is my another favourite flavour, besides chocolate. These plain butterscotch cookies were spreading a wonderful aroma while baking. Icing them with polka dots made them look so cute, that you don’t feel like eating them . Do try these for your kids, they would love them absolutely.

Ingredients Serving: 10

  1. All purpose flour 100 grams
  2. Castor sugar 50 grams
  3. Unsalted butter 50 grams
  4. Egg 1/2
  5. Butterscotch essence 1 teaspoon
  6. Icing sugar 50 grams
  7. Yellow food colour 2-3 drops

Instructions

  1. Mix the dry ingredients, flour and castor sugar.
  2. Cut the cold butter in cubes and mix in the dry ingredients with hand till the mix resembles that of breadcrumbs.
  3. Beat the egg with butterscotch essence and incorporate it slowly in the flour mix till the dough comes together. I could use half of the egg mix to do the same. Take care not to over knead it.
  4. Wrap the mix in a cling wrap and refrigerate for half an hr at least.
  5. After half hr of chilling the dough, take it out and with the help of little dry flour, roll out the dough till 1 cm thickness.
  6. Cut out your preferred shapes from the dough, I made ring shapes .
  7. Bake the cookies in a preheated oven at 180 degree C for 10-12 minutes till they are light brown.
  8. Cool them on a wire rack completely.
  9. For the icing, sieve the icing sugar and then add just boiled water enough to form a paste.
  10. Spread the icing evenly on all the cookies and let it set.
  11. To the icing mix, add few drops of yellow colour to get your desired shade.
  12. With the help of tooth pick, put yellow dots on the iced cookies for a polka dot appearance.
  13. Let the icing set and then serve the cookies, with your favourite beverage tea or coffee or milk, for the kids.
