Smoked Carrot and Ginger Vichyssoise

ABOUT Smoked Carrot and Ginger Vichyssoise RECIPE

This recipe is one of my own creation. As the winter sun gives way to spring, by dinner time, one is usually craving for something warm and soulful. This is one soup you simply cant refuse.

Ingredients Serving: 2

  1. 200 gm carrots
  2. salt to taste
  3. 20 gm celery roots
  4. 5 gm smoked paprika
  5. 20 ml double cream
  6. 200 ml veg stock
  7. 30 gm butter
  8. 10 gm garlic
  9. 30 gm onion
  10. 25 gm ginger
  11. 10 gm orange zest

Instructions

  1. Peel,wash and slice the carrots.
  2. In a micro proof bowl, place the sliced carrots,ginger,orange zest,onion,garlic,butter,celery roots, half veg stock and smoked paprika.
  3. Put in a oven and micro for 15 mins or till the carrots are tender.
  4. Place the cooked carrot mixture in a stainless steel bowl and coal smoke it for about 10 mins.
  5. Process it to a paste.
  6. Take another microproof bowl pour the remaining veg stock, put in a oven for 5 mins and then add in the smoked carrot paste and adjust the seasoning for salt only.
  7. Finish the soup with double cream and serve.
